To liquefy the starch used amylolytic preparations containing alpha-amylase: alpha-amylase hydrolyze internal alpha-1,4-glycosidic bonds of starch, leading to a rapid decrease of the viscosity clusterseven solutions of starch, thereby ensuring the preparation of wort to the action of glucoamylase.
